MICK'S GOULASH SOUP

TOOLS:
4 quart saucepan
Cutting board & knife
Wooden spoon
INGREDIENTS:
1. 2 lbs beef (top round)
    cut into ½ inch cubes
2. 3 tbsp butter
3. 4 med onions, chopped
4. 1 clove garlic, minced
5. 2 tbsp paprika
6. Salt & pepper to taste
7. 1 tbsp caraway seeds
8. 3 tbsp tomato paste
9. 1 bay leaf
10. 3 cups water
11. 2 cups beef broth
12. ½ cup red wine
13. 4 med red potatoes, cubed

PREPARATION:

Brown the meat in butter in a 4 quart saucepan on medium heat. Add the onions and garlic and fry until the onions are translucent. Add the paprika, bay leaf, caraway seeds, water and broth. Bring to a boil, cover and simmer for about 45 minutes. Add the potatoes and simmer for additional 45 minutes. Stir in the tomato paste and red wine. Salt & pepper to taste. Remove the bay leaf before serving.

HINT: This is good served with grilled cheese sandwiches.
