CREAMED SPINACH WITH SPICED BREAD CRUMBS

This makes a great side dish and offers an alternative way to add a "green vegetable" to a meal.
TOOLS:
Large Saucepan
Colander
Large Skillet
Wooden Spoon
Casserole Dish
INGREDIENTS:
2 lbs fresh spinach
8 tbsp butter
½ cup fresh bread crumbs
1/4 tsp paprika
salt & pepper (to taste)
3 cloves garlic, minced
1 large shallot, minced
5 tbsp flour
1 ½ cup milk
1/3 cup sour cream
1/4 cup grated Parmesan cheese
2 tbsp fresh lemon juice
1/4 tsp nutmeg (optional)

PREPARATION: 

Bring 4 qts of water to boil in saucepan; add spinach and cook until wilted, appx 2 minutes. Drain in colander and pat dry. Set aside. Melt 3 tbsp butter in skillet over medium-high heat. Add the bread crumbs, paprika, salt & pepper. Cook until golden brown, appx 2 minutes. Set aside. Add remaining butter to skillet. Add garlic and shallot. Cook, stirring until softened, appx 2 minutes. Stir in the flour. Add the milk and bring to a boil. Add the spinach, sour cream, Parmesan, juice, and nutmeg, stirring until thickened, appx 5 minutes.

Transfer to baking dish, sprinkle with bread crumbs. Bake at 350 deg F appx 15 minutes. Serve warm.
