MANGO BBQ SAUCE

This is not your typical BBQ sauce and it works great with pork loin or pulled pork. It adds a bit of sweetness. For those who use pork for New Year’s, this will give you a new twist to an old tradition.
TOOLS:
• Cutting Board
• Knife
• Mincer
• Blender
• Large Saucepan
• Wooden Spoon
INGREDIENTS:
• 1/4 cup vegetable oil
• ½ tsp cumin seeds
• ½ tsp fennel seeds
• 1 onion, finely minced
• 2 tbsp minced ginger
• 1 jalapeno pepper
• salt
• 2 large mangos
• ½ cup fresh lime juice
• 1/4 cup apple cider vinegar
• 2 tbsp molasses
• 1/4 cup Worcestershire sauce

PREPARATION: 

Peel mangos and puree in blender. (Should have appx 2 cups).

In a large saucepan, warm the oil over low heat until hot and shimmering. Add the cumin and fennel; they should splutter upon contact–be careful. Once the spluttering stops, add the onions, ginger and jalapeno. Saute until softened but not colored. Add the rest of the ingredients. Simmer about 5 mintues.

Taste and season with salt as desired. Serve warm over pork.
