SPICY MACARONI & CHEESE
Submitted by Mike, Livingston, Texas, who says he is always asked to prepare this dish for his family and friends on holidays and other occasions.
TOOLS:
• Large Saucepan
• Small Saucepan
• Cheese Grater
• Wooden Spoon
• Whisk
• 1½ quart baking dish
INGREDIENTS:
1½ cups Macaroni (your choice of style)
1/4 cup Colby cheese, grated
3/4 cup Cheddar cheese, extra sharp,
   grated
½ cup Pepper Jack cheese, grated
4 tbsp flour
2 tbsp butter (unsalted)
3/4 cup of milk, to start (add more milk
  as needed to bring the sauce to a
  creamy consistency, easy to pour but
  not too thin)
1 tsp Hot Sauce
Cayenne pepper to taste
Jalapeno pepper, diced, optional
Salt & pepper to taste

PREPARATION:

Preheat oven to 350 degrees. Grease baking dish. Cook macaroni according to package directions until tender. Drain and place in prepared baking dish. Set aside and keep warm. Melt butter in small saucepan over medium heat. Whisk in flour. Cook for 2 minutes or until mixture is thick and pasty. Gradually drizzle in milk, whisking constantly. Cook 7 to 8 minutes or until sauce is thick. Remove sauce from heat. Set aside about 1 tbsp of each kind of cheese for top. Add remaining cheese, cayenne pepper and jalapeno to sauce. Stir until smooth. (You may have to return to stove over low heat). Add hot sauce, and salt & pepper. Pour sauce over macaroni in casserole and combine well. Sprinkle the reserved grated cheese on top and bake until cheese is melted, appx. 12 minutes. Serves six.

HINTS: I found all of my ingredients at a local supermarket. I did not add any jalapeno peppers to my dish because I was afraid it would be too hot. I wish now that I would have added them for a little more of the spicy taste.
