BISCUIT-TOPPED BEEF CASSEROLE
This recipe was submitted by Karen, from Pandora, Ohio. She says it is popular among family and friends that she entertains in her home. You can prepare it ahead so there is no mess when company arrives.
TOOLS:
• Cutting Board & Knife
• Skillet
• 9 X 13 Baking Dish
INGREDIENTS:
• 1 lb. lean ground beef
• 1/2 cup chopped onion
• 1 cup water
• 1 cup tomato sauce
• 1/2 cup tomato paste
• 1/4 tsp. pepper
• 2 cup frozen mixed vegetables, thawed
• 1 cup shredded part-skim mozzarella
   cheese, divided
• 1 tube (6oz.) refrigerated flaky
   buttermilk biscuits
• 2 tsp. butter, melted
• 1/2 tsp. dried oregano

PREPARATION:

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, tomato sauce, tomato paste and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Remove from the heat; stir in vegetables and 1/2 cup cheese.

Transfer to a 2-quart baking dish coated with cooking spray (dish will be full). Separate each bisuit horizontally in half; arrange around edge of dish. Brush with butter; sprinkle with oregano. Sprinkle remaining cheese over beef filling.

Bake, uncovered, at 375 degrees for 18-22 minutes or until heated through and biscuits are golden brown.

Yield: 4 servings

HINT: I found it was better to bake the dish for about 15 minutes and then add the biscuits and finish baking until biscuits are golden brown. This will heat the casserole thoroughly.
