FRIED BROCCOLI

Submitted by Foxy, Kingston, NY. These broccoli balls add a look of something special on your plate.
TOOLS:
• Steamer
• Large Pot for deep frying or deep fryer
• Ice Cream scoop
• 2 Pie Pans
INGREDIENTS:
• 1 bunch of fresh broccoli, flowerettes
  only or 1 pkg of frozen broccoli
• 2 eggs, beaten
• 2 cups fine bread crumbs
• 2 cups of cooking oil or Crisco
• Salt & Pepper to taste

PREPARATION:
Cook broccoli until soft, let cool. Heat oil. When broccoli is cooled, press pieces into scoop until full. Remove and form a ball. Squeeze excess water out. Roll in beaten eggs, then in the bread crumbs. Deep fry until golden brown, turning while cooking.

HINTS: By using the scoop, the balls will be uniform in size. They don’t take long at all to cook. This can also be used with Cauliflower.
