(click for printable version of this recipe)
With garden season here, we are beginning to pick fresh vegetables. My wife remembered her mother preparing the beans from their garden in this manner, so I decided to share this old time recipe with you.
TOOLS:
• Cutting Board
• Knife
• Wooden Spoon
• Garlic press
• Large Skillet with lid
INGREDIENTS:
• 2 large handfuls of green beans, appx.
  4 cups, with ends removed
• 1 cup red onions,chopped
• 4 slices of bacon, cut into pieces
• 2 or 3 cloves of garlic, minced
• 1 cup beef broth
• Sea Salt & Pepper

PREPARATION: Place bacon pieces in large skillet over medium heat and cook until beginning to soften. If you don’t have much grease from the bacon, drizzle a little olive oil in the skillet. Put in onions, stirring mixture until onions begin to soften. Add the garlic and stir, cooking appx 3 minutes. Add the green beans, about 1/4 tsp sea salt and pepper to taste. Stir to coat the beans. Slowly add the beef broth to the mixture. Cover and reduce heat to a simmer. Cook until beans are tender, appx 25 to 30 minutes.

HINTS: These beans would go well with recipe 17, 19 or 40 that can be found in our archives. Hope you enjoy.
