MAPLE ROASTED VEGETABLE MEDLEY

One of the favorite dishes for a Thanksgiving feast in America is the Sweet Potato. North Carolina has ranked as the No. 1 sweet potato producing state in the United States. We chose this week’s recipe as our salute to the Carolina Panthers because it uses sweet potatoes! It is an easy side dish that could be used to compliment any meat, fish or for vegetarians, it stands well on its own. Happy Thanksgiving!
TOOLS:
Cutting Board
Knife
Small microwavable bowl
Large spoon
9 X 13 Baking Dish
INGREDIENTS:

1 pound sweet potatoes, sliced into ½"
  rounds
2 ½ cups cauliflower florets (about 1
  head)
2 ½ cups broccoli florets
2 tbsp butter
2 tbsp maple syrup
1/4 tsp salt
1/8 tsp ground black pepper

PREPARATION: 

Preheat oven to 400 deg F. Spray baking dish with cooking spray. Scatter sweet potatoes, cauliflower and broccoli in pan. In small microwavable bowl, place butter, maple syrup, salt and pepper. Place in microwave until butter is melted. Appx 1 minute. Pour over vegetables. Stir to coat. Cook in oven until tender, about 40 minutes, stirring halfway through.

HINTS: Keep the florets pretty close to the same size to assure that they will cook evenly. I stirred the dish several times as it cooled to coat the veggies with the sauce.
