MAPLE BREAKFAST CASSEROLE

The Jimmy Dean Sausage Company began in 1969 in Tennessee. This week’s recipe features this brand of sausage in our salute to the Tennessee Titans. Enjoy.

13 X 9 Baking Dish
INGREDIENTS:

2 large Golden Delicious apples,
  peeled & chopped
2 tbsp sugar
1 tsp ground cinnamon
8 eggs
3 cups milk
1 tsp vanilla
8 cups French bread, cut into 3/4 inch
  cubes
2 cups (8 oz) shredded cheddar
  cheese, divided
1 lb pkg Jimmy Dean Maple Flavor Pork
  Sausage roll, cooked, crumbled, drained

PREPARATION: 

Preheat oven to 325 deg F. Toss apples with sugar and cinnamon, set aside. Beat eggs, milk and vanilla in large bowl with a whisk until well blended. Add bread crumbs, sausage, apple mixture and 1 ½ cups cheese. Fold gently until evenly coated. Spoon into lightly greased baking dish and top with the remaining cheese. Bake 40 to 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 12 squares. Serve with warm maple syrup, if desired.

HINTS: This casserole can be made ahead and refrigerated overnight before baking. Adjust the cooking time by about 10 minutes more. I found that eating this dish with the maple syrup served over it really enhanced the flavor of the sausage.
