SHRIMP SCAMPI

Its hard to think of New Orleans without immediately thinking of Gulf Coast Shrimp! We chose this recipe from the Bubba Gump Shrimp Cookbook (from the movie “Forrest Gump”) that a friend had given me. Enjoy this shrimp recipe as our tribute to the New Orleans Saints.
TOOLS:
• Large Skillet
• Large Saucepan
• Knife
• Cutting Board
• Wooden Spoon
INGREDIENTS:

• 1 medium onion, finely chopped
• 1 red bell pepper, finely chopped
• 4 cloves garlic, minced
• ½ cup butter, melted
• 2 tbsp lemon juice
• ½ tsp dried tarragon
• ½ tsp steak sauce
• ½ tsp Worcestershire sauce
• 1/4 tsp hot sauce
• 2 tbsp chopped fresh parsley (optional)
• Hot, cooked linguine or fettuccine

PREPARATION: 

Peel and devein shrimp. Cook onion, pepper and garlic in butter in a large skillet over medium heat, stirring constantly, appx. 4 minutes; add lemon juice and tarragon, steak sauce, Worcestershire sauce and hot sauce. Bring to a boil; add shrimp and cook, stirring constantly, 3 to 5 minutes or until shrimp turn pink. Serve over linguine. Sprinkle with parsley.

HINTS: I used large shrimp in my recipe. For a little more flavor in your pasta, place the shrimp shells in a saucepan and bring to a boil for appx 4 or 5 minutes. Drain the shells, saving the water and return the water to the saucepan. Use it to cook your pasta.
